5-minute Homemade Mooncakes

Mid-Autumn Festival is another big festival that Asians celebrate every year besides the Lunar New Year. What makes this holiday special is that the moon is the brightest and roundest of the year. And that's the reason why this holiday is also known as the Moon Festival. In this festival, families gather together and celebrate with a feast, moon gazing, paper lanterns and mooncakes. 

Mooncakes are traditional Chinese pastries that are usually filled with lotus paste and salted egg yolks that represent the full moon. These sweet and salty delicacies can be pricy to buy as they require skills to make. My in-laws make them at home with healthier fillings such as nuts and taro paste and gift them to family and friends before the festival. The process to make them at home is tedious and often requires a few days ahead to prepare the filling and crust. With this version, you can make ready-to-eat mooncakes in 5 minutes! 

These mooncakes, unlike traditional mooncakes are made from bread and a few simple ingredients. The filling is replaced with mascarpone cheese. After heating them in the microwave, the cheese filling comes oozing out like molten lava cakes! The final product is delicious and contain less calories than traditional mooncakes. Making these mooncakes is mess-free and require little clean up, a fun activity to get children involved. 

Let's get started!

Ingredients or Supplies You'll Need:

  • 3 slices of white or whole wheat bread
  • 1 Tbsp sugar 
  • 1-2 tbsp of milk (adjust as needed)
  • 2 tsp cocoa powder
  • 1 tsp mascarpone cheese
  • Mooncake mould 


Instructions:

  1. Cut bread slices into cubes
  2. Combine cocoa powder, milk and sugar into blender. Blend until incorporated. (Adjust milk to bind all ingredients. Add more milk if dough becomes too thick and not moldable. Add more bread to make dough less watery)
  3. Separate dough into two equal parts
  4. Press each dough flat and add mascarpone cheese in the centre of dough
  5. Roll filled dough into ball form
  6. Stuff ball into mooncake mould. Spread dough carefully and press into mould
  7. Release from mould. And you're done!

Heat up for 15 seconds in the microwave to melt cheese filling before eating.
