It's been awhile since I last made some cute cake pops and I know I'm guilty of it. But, Christmas holiday always make me want to get creative because I get so inspired from the bright festive colours and the endless decorative possibilities.

Here's what I did for my little cake pop gifts for my colleagues and friends, step by step:

{Christmas Chocolate Cake Pops}


Chocolate Cake Pops - adapted from babycakes recipe

Ingredients

3/4 cup all-purpose flour
1/2 cup sugar
3 tbsp cocoa powder
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/4 cup buttermilk*
3 tbsp vegetable oil
1 egg
1/2 tsp vanilla
1/4 cup freshly brewed hot coffee
Chocolate candy melts


Instructions

  1. Combine flour, sugar, cocoa, baking soda, baking powder, and salt in a mixing bowl
  2. Add buttermilk, vegetable oil, egg and vanilla, blend with an electric mixer until smooth
  3. Add coffee and continue mixing until coffee is evenly incorporated into mixture
  4. Pour mixture into pastry piping bag and cut the tip off 
  5. Pipe mixture to heated cake pop machine and cook for 4-5 minutes 
  6. Let the cake pops cool 
  7. Melt chocolate candy melts in a small bowl by microwaving for 30-second intervals 
  8. Dip lollipop sticks into candy melt and insert into cake pops 
  9. Repeat for all cake pops 
  10. Dip cake pops into candy melt to cover them completely and let them cool
*If you don't have buttermilk on hand, pour 3/4 tsp lemon juice or vinegar into a glass measuring cup. Add milk to equal 1/4 cup. Allow to stand 5 to 10 minutes, then use in place of buttermilk.

{Christmas Holly Decorations}

Materials:

  • Colour fondants* 
  • Flower, leaf cutter and holly cutter 
  • Tweezer 
  • Candy melt 
  • Water 
*I made my own fondant with marshmallow, because they taste better than store brought ones. You can follow instructions here.


Instructions:

  1. Roll out white fondant into 1/4 inch thickness 
  2. Cut white fondant out with flower cutter 
  3. Gently stretch each flower fondant so that the petals are not uniformed 
  4. Apply chocolate candy melt on the top of each cake pop with a spoon or brush 
  5. Stick stretched flower fondant, the candy melt will act as a glue 
  6. Roll green fondant into 1/4 inch thickness 
  7. Use a leaf cutter to make imprints on the green fondant 
  8. Cut out each imprints with the holly cutter 
  9. Dab brush into water and lightly brush over the back of holly fondants 
  10. Apply onto cake pop on top of white fondant 
  11. Roll red fondant into tiny round balls 
  12. Grab red balls with tweezers and lightly dab into water to adhere to cake pops 
  13. Wrap each cake pop with plastic bag and ribbon 
  14. You're done!
