I hope y'all are enjoying the hot summer weather so far! Today, I want to share these adorable pineapple popsicle bites that I made for Justice’s 100 days celebration! What I had in mind originally was to make pineapple jellos but I had no luck finding pineapple flavored jello powder. I even planned to make it from scratch but found out that apparently, gelatin won’t  work with pineapples!? I ended up using lemon jello powders with this cute pineapple mold I got from Dollar Tree (similar here). But it turned out to be disastrous. The jellos did not hold in shape once I released them out of the mold. So then I switched gears and came up with these pineapple popsicle bites. I think they looked so cute and totally great for a summer party! 

Here’s how to make these yourself:

Pineapple Popsicle Bites

What you’ll need:

Pineapple ice cube mold
Food coloring
Toothpicks

Ingredients
Crushed pineapples 
Pineapple juice

Directions:

  1. Using a spoon, scoop crushed pineapples into each ice cube mold. Make sure to put the pineapples in the body only and not where the leaves are. (You can also make the pineapples into a puree in a food processor but I preferred mine to have actual pineapples in them). 

  2. Fill each mold with pineapple juice until full.

  3. Dip a toothpick into green food coloring. 

  4. Insert a toothpick into the juice where the leaves are. Blend carefully, try not to let the green mix with the rest of the juice in the mold.

  5. Freeze overnight or at least 3 hours. 

  6. Bend the mold backward to release or run the back under warm water to help remove from the mold.

Enjoy!

You can toss them into your cocktail drinks or eat them as is!
